~Wednesday Weigh In~

AAAARRRRGGGGHHH!!!! I gained 2 pounds this week. I have been very good about my eating too. I only ate fast food once and it was a salad with low fat ranch. I have really gotten my family into the spirit of eating good. I have been trying some fun and healthy recipes and have been power walking every night. Maybe I need to work out more! That boob job is looking further and further away!
So here is a healthy recipe I am making this weekend..
Baked French Toast

4 egg whites
1/2 cup skim milk
1/2 tsp. vanilla extract (or almond)
4 1/2-inch-thick slices nonfat whole grain
Pinch of ground nutmeg

Preheat oven to 450 degrees.

Combine milk, egg whites, vanilla and nutmeg in a shallow bowl.

Dip the bread into the milk mixture, coating both sides.

Spray a baking sheet with vegetable cooking spray or line with a
nonstick baking liner. Arrange bread on baking sheet in a single
layer.

Bake for 6 minutes or until French toast is lightly browned. Turn
bread over and bake for 5 minutes more, or until lightly browned.
Makes 4 servings.

Don't get frustraited! Your body is just adjusting to your new lifestyle. Good job! Keep it up! It took me a year and a half to lose 25 pounds, it is a long process!
