Yay! today we celebrated not only Lisa's birthday, but also her passing her NCLEX! We are all so proud of her. She worked very hard to get through all of her schooling and now she is officially done! So waht a better way to celebrate than at the new Wing Nutz in Saratoga Springs. We are so excited that there is a new place to eat around here. Plus they play the Jazz games and the wings are divine!!
So Happy Birthday to my dear friend Lisa! I love you and I am proud of you! Thanks for being such a good friend!!

Tonight we decided to have a family fun night! It is usually Jon and I that go out for dates but we thought it would be funto spend some time with the kiddos. We took the kids out to eat at Tempanyaki then took them over to Jack and Jills to bowl. Scott and Lisa and the girls joined us and we also took Sydnie's friend Owen. He is a good kid and Tukar loves him. It was a fun night and of course... Lisa kicked all of our trashes!

Tukar was looking a bit shaggy so we took him to Cookie Cutters to get a hair cut!

They are amazing there and took care of him in a jiffy!

 He got to play PS2 and he played Lego Batman.

I found it~ I thought I had lost it, but I found it right where I left it. So glad the Amy helped me find it too! It has been almost a year since I had last scrap booked and I totally forgot how to do it. I was nervous thinking that I was going to sit down and my brain was going to be some kind of empty hole! I must have had some creativity stored up because it all came back to me like clockwork. I had so many things racing through mind and not enough time to do it all. This will definitely have to be a new (well old) things for me! I forgot how much I loved scrapbooking. I lost the love for it when I started getting paid for it. It seemed that the only time I was scrapbooking, was for a class or someone else. I want to make sure I take my ME time. Thanks Amy for a great day!

I made a pie~! This is the first pie I ever made! It wasn't too hard. I baked the crust, made the filling and topped it with Cool Whip! It was a pretty tasty Banana Cream Pie though. Dave and Amy and the boys came over to watch Greys and they helped us eat it!

I totally love these girls. Today I took the kids to get Cheer pictures done. I would have loved to get more picture but wouldnt you know that after 2 pictures, my freakin battery died. After pictures, we all went to Chilis for an after season dinner. It is so fun listening to these girls (and Seth) together. I am gonna miss seeing these kids cheer. Next year!

I am a total sucker for a good Tiramisu! It is my favorite dessert! So today Lisa and I went shopping then stopped off at Olive Garden for some lunch. After some soup and salad... I decided that I deserved a little treat. The great thing about Olive Garden is I could order my own personal little Tiramisu! It was divine!

My poor sick little boy. You know sometimes I kinda like it when my babies don't feel good because they settle down and like to snuggle. But only for a day or so. Tukar has been fighting high fevers, chills, cough, stuffy nose, then a runny nose, headaches, and just feeling like he got hit by a truck for 6 days now. I finally took him to the Dr today just to hear the dreaded.... "sorry it's viral and there is nothing we can do" REALLY?? They told me to plan on it for a couple more days. He is one of those kids that when he doesn't feel good.... you will know. Look at his poor little eyes.

It was soooo good to go to lunch with one of my oldest friends Tracy. We have been friends since High School. Im not even sure how we met but we have shared a lot of laughs and tears together. One of my best memories of her is when I was pregnant with Brekyn, and she lived across the country in North Carolina. I was at my baby shower and she had sent me a video message and I was sitting there in tears watching because I missed my friend. I wanted her here to celebrate this special time with me. When the movie was almost done, I turned around to her standing there! I was so suprised! As like with any friend, we have had our ups and downs, and I am glad we are back. We sat here and talked for 3 hours and we werent done! We had laughs and tears and we could have talked for 3 more! I love this girl and I want her to know I will always be here for her.

Happy Love Day! Today is the day where everyone celebrates their love for someone special. I told Jon I would rather celebrate all year long. Jon and I and the kids (well except for Syd) were so sick today. So we spent the day in bed snuggling and watching TV. We did get up and make a special Valentines day dinner of shrimp and steak, and baked potatoes for the kids. It was all we could do to get that done. We even ate on special heart plates. Jon has this thing for the Toasted Coconut Cupcakes from the Sweet Tooth Fairy. Well I decided that I didn't want to spend $50 buying him a dozen cupcakes, so I decided to take a stab at making my own. Homemade! Not from a box! They turned out pretty dang good but I decided that I am NO Sweet Tooth Fairy!

I wish I could explain this, but when my mom left Sunday night after hanging out for a while, she yelled at me to come outside and this is what we saw. Except it was more spectacular than what my camera could capture. There was this ring around the moon and then the ring rippled out. It was breathtaking. I guess that according to the Farmers Almanac, a Lunar Halo is the sure sign of a storm yet to come. The scary thing is that in the past 4 nights, there have been 4 earthquakes in the Saratoga area. I actually felt 2 of them.

So creepy!

I have this book of projects that I want to do around the house. Jon looks at it with utter disgust. But he came home and told me that for Valentines day, he was gonna do one of the projects from my book. I was so excited. So we cleaned and prepped the laundry room and he went to work. He started it on Staurday and I finished up all the little details on Sunday!

Wow my little girl is growing up. Tonight she went to her first high school dance with her bf Anthony. It wasnt the ideal situation of the Mom having to take them and pick them up, but she did have a good time. It seems like only yesterday that she hopped on the bus for her first day of kindergarten, now she is a freshman in high school and liking boys! What happened to the day that boys had cooties and I told her if she kissed any boys we would have to go get her the cootie shot. She hates shots, so I know she was so scared. Now I have to tell her that if she does bad stuff with a boy, I will send her to a nunery!

Today, one of the greatest coaches ever, Jerry Sloan, resigned from Head Coach for the Utah Jazz. He has been with the Jazz for 26 years and 23 years as Head Coach. He holds the record for the NBA's Longest Tenured Coach. I sat and watched the news conference today where he did say that "it is just time". I admire this man for everything he stands for. He will be sorely missed.

I am happy however that his job will go to another man with class, Tyrone Corbin. #23! Mr Milkman! I know that no can ever fill his shoes, but like what Gail Miller said "he can stand on his shoulders". I think he will be a great asset to the Jazz. I am also glad to hear that Jeff Hornacek will step in as the new assistant coach! GO JAZZ!!!

What a bittersweet day for us. Tonight was the last basketball game of the season for RCHS and that means it was Sydnie's last game of the year to cheer at. It will be nice to have my daughter back and not have to tote her around everywhere. I do like going to watch her cheer though. And I love all of the cheer girls (and guy) They are so fun to be around!

So last night Sydnie asked her little boyfriend, Anthony, to the Sweethearts Dance on Friday. She gave him a tie some Sweetarts and a tie with a little note that said..."Hey Sweetheart, My Heartstrings would be all tied up if you would go to the dance with me on Friday. If the answer is yes, wear this tie to school and I would be the luckiest girl in the world!" So the next day he wore the tie. Yipee!

Late that night, Sydnie and all of the Cheerleaders gave all the boys on the basketball team (and the coaches) Lei's to say good job on a good season! We also gave Coach Nielsen a cute picture of the squad signed by all of them. Each of the girls and Seth got one too. It was a good season!

I want to wish my sweet grandma a Happy Birthday! She turned 81 today! I love her so much and I have so many good memories with her. One of my favorite memories is when I was a kid, she would make me hors d'oeuvre . She would put cottage cheese on Ritz crackers and sprinkle them with Paprika. I thought I very proper eating fancy foods! Another one of my favorite memories was sitting and watching Jeopardy with her. She always knew the answers. I swear she is the smartest woman I know. I always told her she would be one of my lifelines! I love you Grma!

Today I got to go to lunch with my two of my favorite guys in the world! Tukar and I met Jon today for lunch down in Provo and we went to one of my favorite places of all time!! The Pizza Factory! When my mom worked at Banta, we would go to lunch there at least once a week. Well since she doesn't work there anymore, I haven't been there for a long time!

It was like I had remembered. I ordered my usual which is Zucchini noodles (like actual zucchini cut into super thin strips) with Alfredo and Grilled Chicken. And it comes with a trip to the salad bar and a garlic breadtwist! DIVINE!!! It was nice to have some time with my hubby!

IT'S SUPERBOWL XLV TIME!! I would have hoped for better contenders, but it was a good game! This year it was the Packers vs. the Steelers. Now I used to be a cheese head and a couple of years ago when they had the best all time quarterback, #4 Brett Favre. But now I am not quite a fan anymore. So I was in favor of the Steelers.
We got invited to a Superbowl party up at Leslie and Jason's new house. Good food, good friends, and good fun! I was glad I got to see Angie and the boys too! Thanks to my Lester and Jason for a good day!

Can you see the SUCK on my shirt? That got written on there when they got rid of Brett! It seemed like the right day to wear it! Poor Steelers! Sorry for your loss!

Me and my Mimi! I have known this girl for 15 years. We have been there and back SOOO many times. She has seen me at my best and she has also seen me at my worst. All friendships have trials and tribulations and we have certainly had our share as well. But as with great friendships, we over came them. It took us a little while to find our way back this last time, but we did, and I know that we both learned so much from it. I will love this girl til the day I die no matter what happens. Our families are also very close and that is truly special. Jon and Dave are like the Grumpy Old Men. It is funny to watch them together. And our kids have grown up with each other so they feel like brothers and sisters. I love her family just like they were my own.
I know that this friendship is special, and I am glad to have her back in my life. We picked up right where we left off. But I think we will both cherish it a little more now. I know I do. I love ya Mimi!

Awe the great nights where we can feel young again!! Tonight we went and watched the girls put on an amazing performance, watched the boys team play with all their hearts (and still lose) and then the adults went and played a little bowling and Laser Tag!!! I love that feeling of not having a care in the world (even if it is for just a few hours) Jon and I went with Scottie and Lisa down to Jack and Jill bowling lanes where they have this awesome deal for all you can bowl and laser tag for $20! SWEET! So after a couple games of bowling, where I might add that Lisa kicked our TRASH, we went over and played us some Laser tag where I literally got my trash kicked. Jon and I were sneaking up on each other and I went to run around the wall and he decided to do the same thing at the same time! Not a pretty picture when I get smacked square in the mouth with Jon's gun! He won that round. It was a good night. I love hanging out with friends.

Tonight we had to take the girls for their final dress rehearsal for the Half time show tomorrow. Sydnie and the RCHS Cheer girls did a "Mini Cheer Camp" to raise money to buy them a new mat for practice. Brekyn decided that she would help her sister out and we got her signed up. They had girls from age 3 up to age 12. They did such an amazing job! Cant wait to see the show!

Today was my first attempt on making homemade Cafe Rio! I didnt do too shabby either!

CAFE RIO PORK
Pork roast
1 (16 oz.) bottle of salsa
1 can coke
2 c. brown sugar

Place pork in crock pot and fill it half way up with water. Cook roast on high for 5 hours. Drain off water. Cut pork in thirds. Mix together ingredients (salsa, coke, brown sugar) and put on top of pork. Cook an additional 3 hours on high. Shred pork with forks. Leave it on low until ready to serve.
LIME-CILANTRO RICE

2 cups water
2 cups Minute Rice
1 bunch cilantro, finely chopped
Juice of 2 limes
2 tsp. crushed garlic

Bring water, lime juice, and garlic to a boil. Add rice and cilantro and remove from heat. Cover and allow rice to soften.

CREAMY TOMATILLA SALAD DRESSING ( the best part)
1 packet Hidden Valley Ranch Buttermilk Dressing
1 c. buttermilk
1 c. mayo or sour cream
2-3 tomatillas (peel off outer leaf/shell)
1 tsp. crushed garlic
� of a bunch of fresh cilantro
1 tsp. cayenne pepper
Juice from 1 lime (about 2 tsp.)
Salt & pepper

Blend all ingredients in the blender. Refrigerate.

SERVING:

Of course you can assemble everything burrito style. I prefer salad style. For one serving, I first put a tortilla on a plate (or a large serving bowl). Then melt a little cheese on the tortilla so when the salad is gone you can have a cheese tortilla with the creamy tomatilla dressing. YUMMY!! Then put rice, black beans, pork, some chopped lettuce, and the dressing on the tortilla. Finally, garnish your salad with shredded cheese, tomatoes, sliced avocados, or whatever you want. I added some pico and some tortialla strips. This salad is to die for.
